My healthy mini fennel pizzas recipe

Fennel Pizza

I love cooking and being creative in the kitchen, these mini pizzas just taste and look divine, the recipe is quite easy so I really hope you try them and let me know what you think.

For 12 mini pizzas you will need,

For the crust


2 cups of rye flour
1/3 cup olive oil
1 tsp yeast
Thyme
Salt
Pepper

For the tomato sauce


1 can peeled tomato
1/2 cup tomato coulis
2 crushed garlic cloves
olive oil
thyme
salt
pepper
cumin
curcuma

For the topping


Mozzarella cheese
1 bulb fennel
200 grs fresh mushrooms
fresh thyme
Salt
Pepper


We will start by preparing the dough and combining all the dough ingredients together with water. The dough should be smooth and puffy. we will then let it sit covered in room temperature for about 45 minutes. It should double the size.
Then we will start preparing the sauce, again very easy, just add all ingredients and let them cook until all water evaporates and let it cool.
Preheat the oven at 180ºC.
Slice the fennel and the mushroom and cook both separately.
Shred your Mozzarella if not already.
Once the dough is ready, spread it and cut it into any shape you like (it will taste amazing anyways).
Place the mini pizzas dough in a pan. Start by putting a thin layer of cheese followed by the sauce, the fennel and the mushroom. And top it up with cheese again.

Pop your pan in the oven and leave it for about 30 minutes, or until you notice that the pizzas turned golden brown.
